Kulinarisches Erbe der Zisterzienser in Mitteleuropa (CulHerCis22)

Ziel des Projekts ist es, das kulinarische Erbe der Zisterzienser der heutigen Öffentlichkeit näher zu bringen. Die Universität Salzburg (Fachbereich Geschichte, Gastrosophie) betreut fachlich die Erforschung alter klösterlicher Rezepte und lokaler Traditionen in Abstimmung mit Klosterarchiven und Bibliotheken aus dem Cisterscapes-Netzwerk, das seit 2024 das Europäische Kulturerbe-Siegel trägt. 

Um eine breite Öffentlichkeit und vor allem Jugendliche aktiv an diesem Erbe teilhaben zu lassen, werden länderübergreifende Aktivitäten umgesetzt, darunter Kochworkshops, die alte Rezepte in die Gegenwart übertragen. Auf den Spuren der Zisterzienser in Mitteleuropa finden sich kulinarische, regionale und nachhaltige Anregungen für unsere heutige Zeit. Gleichzeitig lässt sich ein altes Netzwerk, das sich durch Innovation und Wissenstransfer auszeichnet, neu beleben.

Culinary Heritage of the Cistercians in Central Europe

The aim of the project is to bring the culinary heritage of the Cistercians closer to today’s public. The University of Salzburg (Department of History, Gastrosophy) is providing expert support for research into old monastic recipes and local traditions in coordination with monastery archives and libraries from the Cisterscapes network, which has held the European Heritage Label since 2024.

In order to actively involve the general public, and young people in particular, in this heritage, transnational activities are being implemented, including cooking workshops that bring old recipes into the present day. Following in the footsteps of the Cistercians in Central Europe, we find culinary, regional and sustainable inspiration for our own time. At the same time, an old network characterised by innovation and knowledge transfer is being revived.

Cisterciácké kulinářské kulturní dědictvíve střední Evropě

Cílem projektu je přiblížit kulinářské dědictví cisterciáků dnešní veřejnosti. Univerzita v Salcburku (katedra historie, gastrosophie) odborně dohlíží na výzkum starých klášterních receptů a místních tradic ve spolupráci s klášterními archivy a knihovnami ze sítě Cisterscapes, která od roku 2024 nese značku evropského kulturního dědictví.

Aby se široká veřejnost a zejména mládež mohla aktivně podílet na tomto dědictví, jsou realizovány nadnárodní aktivity, mezi nimiž jsou i kuchařské workshopy, které přenášejí staré recepty do současnosti. Na stopách cisterciáků ve střední Evropě lze najít kulinářské, regionální a udržitelné inspirace pro naši současnost. Zároveň lze oživit starou síť, která se vyznačuje inovacemi a přenosem znalostí.
